Broiled Chicken with Leftover Guacamole ingredients Wednesday Dinner

Leftover Burrito and Guacamole Ingredients:

Lime, Tomato, Cilantro, Onions and Chicken thighs. 

Things we can make with this is endless.

We could stir fry up the chicken, onions and cilantro. Have a tomato and cilantro salad with a little bit of olive oil. It would go well if we had any of the mexican tomato rice left. 

We could make another burrito. 

We could make a grilled chicken salad if you have some salad mix or spinach.

But since I was in the midst of trying to finish all the homework early because of Halloween festivities, and needing to finish making the costume for my son, it had to be something really simple.

Which would translate to everything in an oven pan lined with foil, then broil for about 20 minutes. 

I put in some carrot strips and the last of the black bell peppers. 

After ten minutes, I turned the chicken around, and moved the vegetables around. 

Chicken cooking time should be translated into "until it's cooked," which I never know, until I stick my knife into it, see if there is blood that comes out, and wiggle it to see if there is any red. 

The first ten minutes, the chicken and vegetables might look dry. Do not fear (like I did), after the other ten minutes, the juices ran and moistened the whole thing. 

I ate it plain, but some rice would have been nice.
